The perfect snack that you can take with you on the go. No bake and easily stored in the freezer, these energy balls will keep you going even on the busiest days.

Hazelnuts are high in protein, healthy fats and fibre. Dates are excellent sources of easily digested carbohydrates with a type of soluble fibre that has been shown to decrease the body’s absorption of cholesterol and delay the absorption of sugar, therefore helping keep blood sugar levels even.

These are gluten free, dairy free and have no added sugar.

3 Cups Medjool Dates (pitted). The more moist and sticky the dates feel, the better the energy balls will be. Don’t be afraid to shop around for quality.

2 Cups Hazelnuts (ground)

1 Cup unsweetened coco powder

2/3 Cup unsweetened shredded coconut (Leave 1/2 out of the mixture to roll the balls in afterwards.)

1 teaspoon of Vanilla

1 pinch of Sea Salt

1/2 Cup Cacao nibs

Place all ingredients together in a food processor. Blend until well combined. Use an ice-cream scoop to portion the balls out. Form the balls by rolling between your hands. (Covering your hands in coconut oil will help keep the mixture from sticking to your hands.)

Roll formed balls in shredded coconut and place with spaces between each ball, on a sheet that will fit in your freezer.

Freeze for 20 minutes.

Take the frozen balls, gently place in a bag and leave in the freezer or fridge depending on how quickly you plan to eat them.
